1 small bunch of fresh mint, leaves picked and chopped
1 garlic clove, finely minced
3 tablespoons of extra-virgin olive oil plus some extra for brushing
1 and ½ tablespoon of balsamic vinegar

1 courgette
1 small bunch of fresh basil (about 20 leaves)
1 small bunch fresh flat-leaf parsley
1 garlic clove

150 g of fresh cherry tomatoes, chopped
